🍮 Old-Fashioned Baked Rice Pudding Recipe

Ingredients:

  • 1 cup cooked rice (white or jasmine works best)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3 large eggs
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp melted butter
  • A pinch of nutmeg (optional)
  • ¼ cup shredded coconut (optional for texture)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a small baking dish (like the one in your photo).
  2. Mix wet ingredients — In a large bowl, whisk together the eggs, milk, cream, sugar, vanilla, salt, and melted butter until smooth.
  3. Add the rice — Stir in the cooked rice (and coconut if using). Make sure the rice is evenly spread and fully coated with the mixture.
  4. Bake — Pour everything into your greased baking dish. Sprinkle lightly with nutmeg on top for flavor.
  5. Water bath (optional but best): Place the baking dish inside a larger pan filled halfway with hot water — this helps the pudding bake evenly and stay creamy.
  6. Bake for 45–55 minutes, until the top is golden brown and a knife inserted in the center comes out mostly clean but still slightly moist.
  7. Cool slightly before serving — it thickens as it cools.

Serving tip:
Serve warm or chilled with a drizzle of honey, condensed milk, or a sprinkle of cinnamon.

It’s creamy, rich, and melts in your mouth — just like grandma used to make!
